Cheese-maker Michihisa Yamaguchi brushes moisture off of a round of cheese at a factory in Bonneval-sur-Arc, in southeastern France. Thirty-three year-old Yamaguchi left Japan six years ago, yearning for a more rustic lifestyle which he has found by making cheese in the French countryside.
